Summer 2017: Island Pork Tenderloin

Island Pork Tenderloin

1/2 teaspoon chile powder
1/2 teaspoon ground cumin
1/2 teaspoon cinnamon
1/2 teaspoon sea salt
1/2 teaspoon fresh ground black pepper

16 oz. pork tenderloin, lean

1/4 cup packed brown sugar
1/2 tablespoon fresh garlic, finely chopped
1/2 tablespoon Tabasco sauce

Combine first five ingredients in a bowl; coat the tenderloin with the spice rub.

Stir together the last three ingredients and pat on the tenderloin.

Using a gas grill:
Cook the first side for 7 minutes over direct, high heat with the lid closed.
Then cook on the second side for 6 minutes over direct, high heat with the lid closed.
Lastly, cook on the third side for 5 minutes with the grill turned off and the lid closed.
