November 2015:  Grandma's Lemon Cake

Grandma's Lemon Cake

1 box yellow cake mix
4 eggs
1 small box lemon Jello
3/4 cup hot water
3/4 cup vegetable oil
2 teaspoons lemon extract

Beat the 4 eggs and mix into cake mix.
Dissolve the lemon jello in the hot water.
Stir oil into the lemon jello mixture, then add to the cake mix.
Beat well with electric beater.
Add the lemon extra and beat well with electric beater.

Grease a 9x12 pan and dust with flour.
Pour batter into pan.
Bake at 350 degrees for about 28 minutes.

Topping:

Combine 1&1/2 cup powdered sugar & 3 tablespoons lemon juice.
Prick cake with a fork all over the top to make openings for the topping to run into the cake.
Spread topping on cake while cake is hot.
